๐ฅพ After a morning of slogging through the snow โ๏ธ and plunging through a small but brisk creek ๐๏ธ it was time to dry out my shoes, socks, and dampened pants. ๐ ๐งฆ ๐
Since we had a long day of hiking still to come we sat on this sun โ๏ธ warmed rock ๐ชจ to enjoy brunch. On this day I enjoyed a homemade veggie polenta egg scramble burrito. Man was it tasty!
A typical strategy for me in the cold is to heat water during morning packup. Place meal into insulated container ๐ซ then cover with hot water and start hiking ๐๏ธ Usually an hour-ish into my morning walk Iโll sit on a rock ๐ชจ and enjoy my meal ๐ฒ while basking in the sunshine โ๏ธ
Iโm still experimenting with getting the perfect cooking and dehydrating technique for eggs ๐ณ For 10 years Iโd never been able to dehydrate eggs but I learned a secret ๐คซ Mix the egg ๐ฅ with either potato ๐ฅ or corn ๐ฝ scramble and place in the dehydrator.
To my scramble I usually add red bell pepper, brocolli, and spinach. Flavor it with plenty of onion, garlic, salt, and pepper. If your feeling fancy add to this black beans, salsa, and cilantro. If youโre not into cold tortillas (this has taken me a long time) then take tortilla chips and crunch a few into your meal as you eat. This is actually my preferred way to enjoy scrambles, dips, and chilies on the trail. The fresh crunch is amazing!
