Smoky Grilled Chicken Salad with Avocado, Cucumber & Corn π½π
This salad is packed with bold flavor and vibrant crunch! It stars juicy grilled chicken over a creamy avocado, cucumber, tomato, and corn medley. Perfect for a satisfying low-carb lunch or dinner.

For the Chicken:
1 chicken breast
1 tbsp olive oil
Β½ tsp smoked paprika
Β½ tsp garlic powder
Β½ tsp chili powder (optional)
Salt & pepper to taste
Squeeze of lemon or lime juice (for after grilling)
For the Salad Base:
Β½ avocado, diced
Β½ cup cucumber, sliced
ΒΌ cup cherry tomatoes, halved
ΒΌ cup sweet corn (cooked or canned, drained)
Optional Dressing:
1 tbsp olive oil
1 tsp lime juice or apple cider vinegar
Salt & pepper

Mix the oil and spices, then rub over the chicken. Grill or pan-sear over medium heat for 5β6 mins per side, until nicely charred and fully cooked. Rest, then slice.
