Peach Tarte Tatin w/ Bourbon Glaze…
I tested this recipe and it was truly delicious!
Not too sweet, with the naturally caramelized fruit juices pronounced in flavor, and flaky pastry
Will have to add this to my dessert menu options and I’ll probably serve it with freshly whipped cream or my cardamom vanilla ice cream that past clients love
p.s. the almost perfect concentric circle made my day 😉

Very happy with the outcome of this experiment for flatbread.
I used a base that I was familiar with but then winged it with the measurements for Greek Yogurt, Oil, etc. The delicate balance of browning and char was spot on.
My tester's first comment was that the *flavor* of the bread was outstanding! Made a quick fresh garlic butter with Plugra to top it off.
I will most certainly be using this again for Mediterranean, Middle Eastern, and Indian dishes!
