I almost forgot about - I traveled over the weekend so did not have time to prepare anything to bring for lunch today. Could I have said 'screw it' and grabbed McDonald's for lunch? Yes. Did I? No. And let me tell ya, that Filet O’ Fish was sounding really good when I woke up tired and hungry.
But alas, I fought the urge and I went with a trusted quick meal I go for when I'm low on time or too hungry to wait to eat. I threw this together at 7:15 this morning as I was rushing to get to work.
*4-6 frozen turkey meatballs
* 1 minute rice brown rice cup (these are a lifesaver when you need a quick meal)
* Pasta Sauce (to taste)
* Shredded Mozzarella (to taste)
Microwave meatballs for 2 minutes, or until heated through. Microwave the brown rice for 1 minute (or as directed). Transfer to a dish, put meatballs on top, pour sauce on top and add mozzarella cheese. Heat until sauce is hot and cheese is melted.
Add a nice side salad loaded with veggies or some spinach or broccoli on the side.
Lunch in less than 5 minutes!

This is so, so true. Spend the money now on healthy foods, exercise, and self care and you'll save money later on doctors visits, medications and hospital stays.
