Mutton Yakhni Pulao โœจ
For the mutton stock-
๐Ÿ”ธ1 kg bone-in mutton
๐Ÿ”ธ2 bay leaf
๐Ÿ”ธ2 cinnamon stick
๐Ÿ”ธ1 tsp cumin seeds
๐Ÿ”ธ2 tsp coriander seeds
๐Ÿ”ธ1 tsp fennel seeds
๐Ÿ”ธ10-12 black peppercorns 
๐Ÿ”ธ6-7 cloves
๐Ÿ”ธ4-5 green cardamom 
๐Ÿ”ธ1-2 black cardamom 
๐Ÿ”ธ3-4 dried red chillies
๐Ÿ”ธ1 star anise (optional)
๐Ÿ”ธ1 medium onion roughly cut
๐Ÿ”ธ6-7 garlic cloves
๐Ÿ”ธ1-2 inch ginger 
๐Ÿ”ธ2 tsp salt
๐Ÿ”ธ3-4 cups water

Pressure cook or slow cook the mutton with above ingredients till its 90% done.
Once the mutton is tender, seperate the mutton from the stock, strain the stock & set aside for later use.

For the pulao-
๐Ÿ”ธ4 cups rice (washed & soaked for 30mins)
๐Ÿ”ธ7 cups stock mixed with water if its less in quantity (1 cup rice = 1.75 cups water)
๐Ÿ”ธ1/4 - 1/2 cup oil
๐Ÿ”ธ1 cinnamon stick
๐Ÿ”ธ2 bay leaf
๐Ÿ”ธ2-3 medium onion sliced
๐Ÿ”ธ2 tbsp ginger garlic paste
๐Ÿ”ธ5-6 green chillies
๐Ÿ”ธ1 cup curd
๐Ÿ”ธ2-3 tbsp lemon juice
๐Ÿ”ธSalt- to taste
๐Ÿ”ธ1 tsp garam masala powder
๐Ÿ”ธ1-2 tbsp ghee
๐Ÿ”ธFew fried onion

Heat oil, add in bay leaf & cinnamon stick along with sliced onion, sautรฉ till the onion turns golden brown & add in ginger garlic paste, sautรฉ & then add in the boiled mutton pieces along with green chillies, mix, add in curd, give everything a good mix until the oil seperates & then add in stock, lemon juice, check for salt & add in accordingly, mix, add in washed & soaked basmati rice,along with garam masala powder, ghee & mix everything.
*Check for salt again at this stage, add if required (it should be on the saltier side)
Cook on high flame till the water starts boiling, then lower the flame, cover & cook till the water is almost absorbed & then place a tawa beneath & cook on dum for another 10-12 mins till the water is completely absorbed.
 Garnish with few fried onion, serve with some raita or chutney & enjoy ๐Ÿ™ƒ
