Choco Butternut Mini Donuts
If you are craving for these Choco Butternut Donuts,you can just make it at home and enjoy this childhood classic.They are the perfect sweet treats that kids and adults will surely enjoy!
Recipes and Procedures:
In a bowl:
1 cup butter room temp (226g)
1 1/2 sugar(300g)
-whisk for 3-4 mins until light and fluffy
3 large egg (167g) add one at a time
1 tsp vanilla
-sift the dry ingredients before adding to the mixture
2 1/4 cup All purpose flour (305g)
1 tbsp baking powder (12g)
1 tsp salt
4 1/2 tbsp cocoa powder (33g)
-add the dry ingredients in 3 additions alternating with 1 1/2 cup milk + 1 tbsp milk (fullcream)
-mix in between additions
-beat for 10 secs then use spatula to mix the ingredients well
If you will make big donuts,you can follow this procedure:
-grease the preferred pan molder to prevent the donut from sticking
-3/4 full on the molder
1) Bake in a pre heated oven at 160C for about 25-30 mins
2) Donut molder size:medium
3) Yields: 23 pcs
4) Unmold from molder and cool down completely in a cooling rack
Note: You can use mini donut maker for this recipe
Butternut Streusel
In a baking tray:sift the following ingredients:
1/2 cup All purpose flour (65g)
1/2 cup cake flour (65g)
Bake it for 10-12 mins until slightly brown or until the aroma of the flour comes out or you can toast it in a pan @ medium heat
In a bowl combine the following:
1 cup+ 4 tbsp white sugar (25g)
orange food coloring
Sift the toasted flour then add the remaining ingredients:
1 cup powder milk (15g)
1/2 cup butter (113g)softened
Add the sugar mixture and mix well
Put again in a baking tray and bake for 10-15 mins until become dry 160C
Chocolate Streusel
In a bowl:
2 1/2 -5 tbsp butter (45g)
2 tbsp powder sugar
-mix using spatula
2 tbsp cocoa powder
1/3 cup flour (75g)
1-2 tbsp powder milk
Mix well and transfer into a baking tray
Bake in s preheated oven for 10 mins until dry
Melt 1 cup dark chocolate
Place it in microwave for 1 min (30 sec interval)
Mix until chocolate melts
To assemble the donut:
Brush the donut with melted chocolate for the toppings to stick then roll the donut to your prepared streusel
Creamy Chicken Empanada de Kaliskis
For the dough:
Dough 1:
1 kg first class Bread flour
180g refined sugar
10 g salt
140g unsalted butter
500g water
1'pc egg
Procedure:
On a clean surface,pour the flour,put a wheel on the center and add in all the ingredients,dissolve everything esp. the sugar before adding all the sorrounding flour.Slowly add the liquid or water,but don't add the water at once.After kneading,cover the dough with cling wrap and set aside for 15 mins.
Dough 2
Sue paste or Panit:
200g 3rd class Bread flour
125g Superdough shortening
Mix all the ingredients to form a dough,cover with cling wrap and set aside for 15 mins
Assembling procedure:
1)Flatten the first dough as thin as possible and add on top the 2nd dough evenly,then fold into 3 folds then cover and rest for 15 mins
2)After 15 mins,flatten with rolling pin and cut into 2 pcs then roll longitudinally
3)Cut into 40 grams each,this dough yields 50 pcs of medium size empanada
4)Best cook deep fried on medium heat
Chicken Empanada Filling
1kg chicken breast (cut into small cubes)
-marinate using pepper,salt and chicken cubes for 30 mins while preparing the other ingredients
garlic 1 head
onion 1 big
carrot (diced) 2 pcs
raisins 1/2 cup
cheese 1/2 cup
green peas 1/2 cup
potatoe (diced) 2 pcs
oyster sauce to taste
sugar 3 tbsp
salt and pepper to taste
bell pepper and mushroom (optional)
cooking cream and a little flour to bind all the ingredients
In a wok:
Sautee all the ingredients using butter and olive oil.Starting with garlic,onion,chicken,potatoe(cover and simmer to cook) then add the rest of the ingredients.Cook until it thickens and dry.
Cook the filling ahead of time to cool it down before using

Kababayan bread / Filipino Muffin

In a bowl: using a sifter
Dry Ingredients:
2 3/4 cup All purpose flour
1 1/4 cup sugar
1/2 tsp salt
1/2 tsp baking soda
2 tsp baking powder
Sift and combine all the ingredients
Wet ingredients:
2 large eggs
1/3 cup melted butter or margarine
3/4 cup evap milk
2/3 cup water
3/4 cup oil
1 tsp vanilla
1. Mix and combine all the ingredients using a mixer or a whisk.Dont over mix. Add a little yellow food coloring (optional) Grease the muffin pan
2.Use a big icecream scooper to make the scooping easy
Baking time: 18-20 minutes or until the sides is golden brown
Oven temp: 170C
Using a big ice cream scooper it yields 18 big muffin
Super soft and yummy from the bread,filling and frosting
