Bhindi Achari Masala

Ingredients:
Lady finger ½ kg
Onions 4
Tomatoes 4
Green chilies 10
Mustard seeds 1 tsp
Fennel seeds ½ tsp
Red chili powder ½ tsp
Salt 1 tsp
Turmeric powder 1 tsp
Tamarind juice 4 tbsp
Oil 2 tbsp

Method:
Heat oil and fry lady fingers. Then in the remaining oil, add onions, tomatoes, all spices and salt. Cook well. Now add lady fingers, green chilies and tamarind juice. Cover and cook for 10 minutes. Serve hot.

Chicken Shahi Handi

Ingredient:
Chicken bone ½ kg
Oil as required
Salt to taste
Red chili powder 2 tsp
Cumin powder 1 tsp
Coriander powder 1 tsp
Ginger garlic paste 2 tsp
Onion 2
Whole cumin 1 tsp
Green chili 2
Tomato grinded ½ cup
Black pepper powder 1 tsp
Almond, cashew nuts powder 2 tbsp
Cream 2 tbsp

Method:
In a pot add boneless chicken ,oil ,red chili powder ,cumin powder ,coriander powder ,and ginger garlic paste add and mix well and place in refrigerator .now in a pan heat oil and add marinated chicken and fry till than golden brown .in a pot add onion cumin green chili ,ginger garlic paste ,grinded tomato ,salt ,red chili powder and black pepper powder and roast 5 to 7 minutes .then add chicken and cook 3 to 4 minutes .now add almonds ,chew nuts and cream mix .delicious chicken shahi handi ready .

Garam Masala
Ingredients
• 50 gram black cumin (kala zeera)
• 4 cloves
• 6 big cardamoms
• 6 small cardamoms
• 50 grams black pepper
• ½ tsp nutmeg (jaifal)
• ½ tsp mace (javetri)
Method
1. In a grinder, add 50 grams black cumin, 4 cloves, 6 big cardamoms, 6 small cardamoms, 50 grams black pepper, ½ tsp nutmeg and ½ tsp mace and grind well,
2. Preserve prepared Garam Masala in a jar and use to requirement.
