🍗 Chicken Afritada (Afritadang Manok)
Ingredients:
2 lbs (about 1 kg) bone-in chicken pieces (thighs, drumsticks, or a mix)
2 medium potatoes, peeled and quartered
1 large carrot, peeled and sliced
1 red bell pepper, sliced into strips
1 green bell pepper, sliced into strips
1 medium onion, chopped
4 cloves garlic, minced
1 cup tomato sauce
1 cup water or chicken broth
2 tablespoons soy sauce
1 tablespoon fish sauce (optional)
2 tablespoons cooking oil
2 bay leaves
Salt and freshly ground black pepper, to taste
½ cup frozen green peas (optional)
Instructions:
Sear the Chicken:
In a large pot or deep skillet, heat the cooking oil over medium heat.
Add the chicken pieces and sear until lightly browned on all sides. Remove and set aside.
Sauté Aromatics:
In the same pot, sauté the chopped onion until translucent.
Add the minced garlic and cook until fragrant.
Simmer the Chicken:
Return the seared chicken to the pot.
Pour in the tomato sauce, water or chicken broth, soy sauce, and fish sauce (if using).
Add the bay leaves.
Bring to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes.
Add Vegetables:
Add the potatoes and carrots to the pot.
Continue to simmer for another 10 minutes, or until the vegetables are tender.
Final Touches:
Stir in the bell peppers and green peas (if using).
Simmer for an additional 5 minutes, or until the bell peppers are tender-crisp.
Season with salt and pepper to taste.
Serve:
Remove the bay leaves.
Serve hot over steamed white rice.
Tips & Variations:
Cheesy Twist: For a richer flavor, add grated cheese during the last 5 minutes of cooking.
Meat Variations: You can substitute chicken with pork or beef, adjusting the cooking time accordingly.
Vegetable Additions: Feel free to add other vegetables like green beans or chickpeas for added texture and nutrition.
