Being on high animal fat diet can make me think much less often (way way way much less) about food as my body and brain stay nourished for longer periods. I was in such a rush this morning that I couldn't squeeze in a meal time before hitting the road. Fortunately, there's "lard-rendering" activity in the kitchen and so we have a good amount of pork cracklings just waiting to be devoured. I put a bunch in a container with some vinegar and that solved the 2-fold problem: hunger and craving. It's my fave to-go food. Pork cracklings contain a heap of cholesterol from its saturated fat and vitamin B12, both of which I am in constant need of; they're also loaded with sodium, potassium, iron, calcium and magnesium - nutrients that a wife, mother and business person like I am cannot be efficient without.
