Sunday roast tomorrow let’s just have a look at some of the salts

Red peppercorn and garlic salt (used as finish off our chicken fat roast potatoes)

Fennel seed salt (excellent for the porchetta and and suckling pig)

Sage and rosemary salt (staple in Osteria kitchen, building block and seasoning salt for most of our veggies and meats)

I feel seasoning should be done to compliment and highlight what makes an ingredient special. You shouldn’t change what is beautiful already.
