Let Akara, moi, moi rest for your hand this weekend. Try this fish and egg sauce for your weekend. You can eat it with rice, yam, potatoes, plantain or just as a meal on its own.

Ingredients:
1 smoked fish(de_boned)
6 eggs(whisked)
5 medium tomatoes( blended roughly or diced).
1 big green pepper. ( diced)
Fresh peppers( as you can tolerate)
1 medium-sized onion (diced)
Spring onions( for garnishing)
Vegetable oil
1 cube of knorr
Multipurpose spice( Chefbas❤❤❤ if you have or use any brand of your choice but you should get chefbas😌).
Black pepper(optional)
Ginger and garlic
Salt

Procedure:
Start by cutting all your veggies, prepping all your ingredients and setting them aside.

◾In a pan pour in your oil allow to heat up for a minute.
◾Add in your onions, and allow to fry for 1min, add in your ginger and garlic allow to fry for 1min.
while stirring occasionally to avoid burning.
◾Add in your tomatoes and pepper blend allow to fry until the oil settles on top.
◾Add your fish and spices, knorr cube and salt allow to cook for 4mins.
◾Add in your eggs and leave them to "bubble" a little before scrambling them so they can have some lumps as you see in the image. ( this should take 4mins).
◾Put in your green peppers and spring onions and turn off the gas. ( let the heat continue to cook them, they are veggies and don't need to be overcooked).
◾Your food is done. Serve with any dish of your choice.
