Stew Recipe
Ingredients
Azu fridge ( Ice fish),
Small promo,
Fresh and sachet tomatoes,
Shombo,
Fresh pepper,
Garlic and ginger,
Crayfish,
Onion,
Curry powder,
Thyme,
Carrots,
Green pepper,
Seasoning cube and salt,
What did I do differently?
I blended a combo of fresh pepper, garlic, ginger, and enough onion akeptpitt it aside.
I did the same thing to the fresh tomatoes and cooked them till dry.
I washed the fish and seasoned it with salt, seasoning cube, thyme, the blended mixture of combo, fresh pepper, garlic, ginger, and onion, and put it inside the fridge to marinate while I left to do laundry.
On a separate plate, I cut the carrots, green pepper and another onion.
After some hours, I brought out the fish from the fridge and cooked it with small water. The water was at the same level as the fish.
In a clean pot, I added groundnut oil and fried only the sachet of tomatoes, after some minutes, I added the already Cooked fresh tomatoes and stir-fried for a minute before adding the blended mixture of combo, fresh pepper, garlic, ginger and onion, followed by the stock water.
It was thick so I added another water, then salt, a cube of seasoning cube and enough crayfish and cover it to cook.
After cooking for 10 minutes, I added the chopped carrots and allowed them to simmer for a minute before adding the chopped green pepper, covered and put off the gas. I don't like cooking my green pepper, I allow the heat from the stew to bring out the flavour from the green pepper.

Food is ready. I served it with cucumber and a touch of salad cream. Then I used cucumber to represent this fruit I usually see on a glass of wine in a fancy restaurant πππ.
Before now, I used to blend garlic, ginger, onion, combo, and fresh tomatoes, and cook till dry before frying but today I tried a different approach and it came out good. I think I will stop frying fresh tomatoes after cooking them till dry.
Hints:
Marinating your meat/fish makes it tasty. It is usually done overnight. If you like put am inside the freezer....I said fridge ooo.
Cook your meat/fish with a considerable amount of water, not River Niger.
