1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a large mixing bowl, combine almond flour, coconut flour, sweetener, and salt.
3. In a separate bowl, whisk together melted coconut oil, eggs, and vanilla extract.
4. Add the wet ingredients to the dry ingredients and mix until a dough forms.
5. Roll out the dough on a floured surface to about 1/4 inch thickness.
6. Brush with melted coconut oil and sprinkle with cinnamon sugar.
7. Roll up the dough tightly and cut into 8-10 rolls.
8. Place on the prepared baking sheet, leaving about 1 inch of space between each roll.
9. Bake for 18-20 minutes, or until golden brown.
10. While warm, drizzle with a sugar-free glaze (like a mixture of cream cheese, butter, and sweetener).
