CRUNCHY CHICKPEA SALAD WITH YOGHURT DRESSING
Serves: 2–3
CRISPY CHICKPEAS
1 x 400g tin of chickpeas, drained and rinsed
1 tbsp olive oil
Salt, pepper, and paprika to taste
SALAD
1 cucumber, diced
200g cherry tomatoes, halved
½ red onion or 3 spring onions, thinly sliced
Small handful of fresh parsley and/or dill, roughly chopped
80g feta, crumbled
YOGHURT DRESSING
150g FAGE Total 0% or 5% yoghurt
2 tbsp extra virgin olive oil
1 tbsp lemon juice
1 garlic clove, finely grated
Salt and pepper to taste
METHOD
Preheat your air fryer to 200°C.
Toss the drained chickpeas with olive oil, salt, pepper, and paprika. Cook in the air fryer for approximately 15 minutes until golden and crispy.
Meanwhile, whisk together the FAGE Total 0% or 5% yoghurt, olive oil, lemon juice, garlic, salt, and pepper until smooth.
Chop all the salad vegetables and arrange in a large bowl with the herbs and crumbled feta.
Top with the crispy chickpeas, drizzle over the yoghurt dressing, toss and serve immediately.
