Ricotta gnocchi! A delicious alternative to the more traditional potato ones, although, surprisingly, much older! That's because the potato is a plant native of America. When it arrived in Italy. In the early 1500, people were a little confused by this root. They did not know how to eat, and in Italy was considered foul food, not even dignified enough to give to beggars. Probably it was down to the high solanine content and the amount of time spent in a boat crossing the ocean! Thank God that someone found out out to use them!!!
Working hard! But totally worth it: if you think that making pasta by hand is a poitless chore, hard, lots of diry stuff to clean... you have been brainwashed by years of marketing by food companies. They made you a food zombie: buy whatever food looks good enough, never mind what the nutritional value!

I watching my family making pasta everyday: the bonding that you create with other people, the relaxation as you take a couple of hours to stop and do skmething meaningful and beautiful, the happiness of creating something from scratch... starting with a little flour and eggs or water, and endong up with delicious and nutritious food.
Dont buy into marketing messages created to stroke your worst side: they dont care about you, even though they make it sound that way!
