Yule log cake is a traditional Christmas dessert in Belgium and it is usually made with a sponge cake. 3 years ago, I came up with the idea of combining a meringue roll with a mocha semifreddo filling and to top it all with caramel and roasted maple syrup pecans... No need to say this has been our favourite Christmas dessert ever since. The process may be a little long and that's why I make it only once a year but it's not complicated and the result is so much worth it !

You can even make it dairy-free if you follow the recipe of my dairy-free semifreddo for the filling.

You can also fill it with chocolate mousse, and top it with chocolate sauce and fresh raspberries.

I’m back ! I did not quit cooking, I simply had no time for photographing and posting… 
But I’ve got some big news guys ! Some cool event is taking place soon and you’ll know more about it asap. In the meantime, let me drop this wonderful fall recipe. Could you guess it’s dairy-free ? You can’t even taste the difference from a real Semifreddo ! This Italian dessert is soft and melts in the mouth with a sweet coffee flavor, some caramel on top and maple syrup toasted pecan nuts… Wether you choose to make it with real cream or coconut cream, this rather light dessert will be unforgettable. 

- 4 eggs 
- 1/3 cup instant coffee
- 100g sugar
- 300ml coconut cream (a can)
