ANTI-INFLAMMATORY SALMON WITH GREEN PESTO 🌿

One of my go-to dinners when I want something quick, satisfying, and that actually makes me feel good.

Rich in protein, omega-3s, and healthy fats.

🛒 INGREDIENTS (1 serving):

- 1 salmon fillet
- Salt and black pepper
- 1 tbsp extra virgin olive oil (EVOO)

🌱 GREEN PESTO:

- 1/2 cup fresh spinach
- 1/4 cup fresh basil
- 1 tbsp EVOO
- Zest and juice of 1/4 lemon
- 1/2 garlic clove
- 1 tbsp cashews
- 1/2 tsp white miso (optional but recommended)
- 1 tbsp nutritional yeast
- 1 tsp apple cider vinegar
- Salt and black pepper

🥗 SALAD:
- Rocket
- Cherry tomatos
- Orange wedges
- Toasted almonds
- Simple dressing with salt + evoo + citrus

🍴 METHOD:

1. Season the salmon with salt, pepper, and a little EVOO.
2. Cook in a hot pan until golden and just cooked through.
3. Blend all pesto ingredients until smooth and creamy.
4. Toss the salad with the dressing.
5. Plate the salmon and spoon the pesto over just before serving.
