Nomadic Nerd Project

We tried two new dishes today, including the hard to find Tikin Xic & Poc Chuc. Tikin Xic is the fish version of Cochinita Pibil, baked in spices and banana leaves. Poc Chuc is thin pork chop marinated in spices, seared, and drizzled with sour orange, salsa, and pickled red onion. These were both delicious. The lady making tortillas, by hand, for the masses was amazing. They were the best, pillowy, and fresh.
