Espadín is the agave equivalent of the kid who’s good at everything and doesn’t make a big deal about it. It grows fast, it’s generous with sugar, and in the hands of a good mezcalero it can taste like a dozen different things. Koch grows it in Oaxaca, harvests it by hand, and double-distills it in copper the old way, no shortcuts. The result is fruity, a little sweet, toasted coconut, a wisp of smoke that knows when to leave. Roots in, mezcal out.
