✨Bonus reminder✨ You may not be able to control someone’s negative behavior, but you can control how long you participate in it.

This has been my easy, go-to breakfast, lunch, or dinner lately! ✅

Ingredients:
▪️2 eggs
▪️1 tortilla
▪️Cheddar cheese (about 1/2 cup shredded)
▪️Spinach
▪️1/4 yellow onion
▪️Optional: salsa or guacamole

👩‍🍳Breakfast tortilla recipe:

1️⃣ Thinly slice onion (enough slices to spread evenly across the bottom of a skillet)
2️⃣ Lightly coat a 10-inch skillet (large enough to fit a tortilla) with cooking oil on medium heat
3️⃣ Add onion slices to skillet and cook for a few minutes (make sure they don’t burn)
4️⃣ When onion slices are starting to lightly brown, scramble two eggs and pour them on top to cook.
5️⃣ When scrambled egg mixture starts bubble add a tortilla on top
6️⃣ Flip the tortilla along with the egg
7️⃣ Add shredded cheddar and spinach leaves on top
8️⃣ When cheese has melted fold tortilla in half (spinach and cheese will be on the inside) and serve
9️⃣ [Optional] Dip breakfast tortilla in creamy salsa, salsa verde, guacamole, or whatever sauce you enjoy!
