Hot Honey Chicken Bacon Ranch Quesadillas
(Vegan)
These are dead simple, delicious and packed with flavour!
Ingredients:
1 cup soy curls, soaked for 10 minutes
2 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tbsp corn starch
1 brick smoked tofu, diced up
1 tbsp soy sauce
1 tbsp olive oil
1 onion, diced small
1 red pepper, diced small
1 green pepper, diced small
Your favourite sliced cheese
Hot honey ranch
1 cup mayo
1 tbsp dried ranch
1/2 tsp salt
1 tbsp chipotle peppers, finely diced
1/4 cup hot honey or maple syrup
2 large burrito size tortillas
Method:
1. Preheat your griddle over medium heat (this can also be done in a pan). Turn one half of the griddle on, and make sure the other half is off, this will be the cooling zone.
2. Make the ranch by combining everything in a bowl and set aside.
3. Add 1 tbsp of veg oil to the griddle and add the soy curls and tofu. Cook until crispy. Once crispy, set in the cooling zone. Add the peppers and onions and cook until tender, should only take 5 minutes.
4. Combine everything together and then set in the cooling zone.
5. Place a tortilla on the griddle, top half of it with cheese, the pepper and chicken mixture, more cheese and drizzle on the ranch. Flip the tortilla over itself to create the quesadilla.
6. Remove and slice it up, dunk it in that ranch and dig right in!
