🌿 Homemade Mixed Veggie Pickle Salad 🍆🥬🍅

Nothing beats the taste of homemade! Here’s how I made this colorful, crunchy mix 👩‍🍳👇

✅I chopped up eggplant, cabbage/brussel sprout, cucumbers, green tomatoes, red tomatoes, green onions, and garlic.
✅💧 I poured hot water and salt over the cabbage and let it rest on the side.
✅Then I salted the chopped eggplant, waited about 20 minutes, and drained out the liquid.
✅Next, I mixed all the veggies together — adding
✨ red pepper flakes, black peppercorns, a little pickling salt, and a cup of apple cider vinegar.

✅Gave it all a good hand mix (that’s where the magic happens 😄) and packed it into jars.

You can eat it right away — but trust me, by the next day the flavors marry beautifully for that perfect tangy, crunchy bite. So addictive! 😋
