Service. Delivered in many different ways. Being a guide and hosting a group requires a relentless energy. Always going the extra mile to entertain and help where required. We were lucky to have had a trip of a lifetime along Ha Long Bay this weekend; our host; Long was exceptional. I love traveling and exploring different cultures and watching the way they approach service. How important it is for them; How important as guests we need it to feel. Heartbreaking news coming out of Melbourne. Deeply saddened to hear the senseless loss of an icon and legend that influenced myself so much, our industry and our community. Apple strudels and smiles.. pasta and granitas.. always encouraged to over indulge... So many fond memories; as a young waiter I was always inspired by the energy and enthusiasm of Sisto’s service. A legacy that remains in so many of us in the industry. Condolences to family, friends, colleagues and the community. .I.P Sisto
